Seaweed is so healthy for us and tastes great if done right, especially wakame. It's rich in calcium and iron, among other minerals and contains a broad spectrum of vitamins - especially vitamin A and the B vitamins. Iron is very important for pregnant woman (since you are housing more blood than the rest of us) and this recipe will help add another iron-rich meal to your day.
3 long pieces wakame seaweed (soaked for 10 minutes)
1 medium sized cucumber, very thinly sliced
4 Tbls rice vinegar
1 Tbls nama shoyu (or soy sauce)
chili sesame oil, dash (optional)
Sesame seeds, raw or toasted (I prefer toasted)
Mix the above and serve in small bowls.
If you love sushi and seaweed like I do, you'll have to make your own nori wraps at home as well.
